Highland Veggie Crumble Larb Lettuce Cups

Ingredients

  • 250g MacSween Highland Veggie Crumble

  • 200g pork mince

  • 2 tsp vegetable oil

  • 2 stalks lemongrass, finely chopped

  • 1 large red chilli, finely chopped

  • 2 cloves garlic, crushed

  • 1 banana shallot, finely chopped

  • 2 tsp palm sugar or brown sugar

  • 2 tbsp fish sauce

  • 1 lime, juiced

  • small bunch fresh coriander, chopped

  • 1/2 cucumber, seeded and sliced

  • 2 spring onions, sliced

  • 2 baby gem lettuce

  • handful of peanuts

Method

  1. Heat the oil in a large frying pan or wok over a medium heat and fry the lemongrass, chilli, shallots and garlic for 2 minutes. Add the Highland Veggie Crumble and pork mince, continue to cook for another 6-8 minutes, stirring all the time. Keep cooking until the mince is fairly dry.

  2. Add sugar and fish sauce and let the mixture bubble for a minute then stir in the lime juice and most of the coriander.

  3. Divide the between the lettuce leaves and garnish with cucumber, spring onion, coriander, peanuts, chilli slices and a final squeeze of lime.
