200g baby salad leaves
1 Granny Smith apple, peeled and cored
100g red onion, peeled and thinly sliced
40g coarse grain mustard
180ml extra virgin cold pressed rapeseed oil
30ml white wine vinegar
Salt and freshly milled black peppercorns
Mustard dressing - Whisk the mustard,
vinegar and seasoning
together, blend in the oil, season and put to one side.
1. Microwave the black pudding for 90
2. Arrange the dressed salad leaves on the plates.
3. Break up the black pudding and place on the leaves, garnish with
the apple and red onion.
