Macsween Black Pudding Salad

 Preparation Time: less than 10-12 minutes, Serves 4


2pkts(4 slices) Macsween 90 second black pudding
200g baby salad leaves
1 Granny Smith apple, peeled and cored
100g red onion, peeled and thinly sliced

Mustard dressing:
40g coarse grain mustard
180ml extra virgin cold pressed rapeseed oil
30ml white wine vinegar
Salt and freshly milled black peppercorns


Mustard dressing - Whisk the mustard, vinegar and seasoning
together, blend in the oil, season and put to one side.

To serve

1. Microwave the black pudding for 90 seconds.
2. Arrange the dressed salad leaves on the plates.
3. Break up the black pudding and place on the leaves, garnish with the apple and red onion.
