Black Pudding, Red Onion Marmalade & Apples
Ingredients (serves 4)
3 tbsp olive oil
2 large red onions, peeled, thinly sliced
1 tsp light muscovado sugar
1 tbsp balsamic vinegar (the older and thicker the better)
8 slices of Macsween black pudding
25g butter
2 large Cox apples, or egremont russet, peeled, thickly sliced
½ quantity of apple sauce (as per below)
The Apple Sauce
500g Bramley apples, peeled, chopped
1 tbsp sugar
Place the apples, sugar and 1 tbsp water in a microwave bowl, cover and cook on high for 5 minutes. Leave for 2 minutes, then mash. Alternatively, cook gently in a saucepan for 10 minutes.
